One of my favorite things to do on a Sunday is to cook. It’s the one day out of the week my boyfriend and I have the whole day off together. We workout, do some yoga, maybe go for a run, enjoy some meditation, and watch movies. We also take time to prep food for the upcoming week to stay on track with our own personal goals. One of my favorite meals is breakfast. When I went to bed last night I already knew I was losing an hour, so instead of being bummed out about it I did what I do best… I dreamt about food! Today’s breakfast was inspired by Coconut! Honestly, I think Coconut is one of my favorite things and to think for years I never would eat anything with Coconut. Boy… was I missing out.

Gluten Free Coconut PancakesToday I served up: Gluten Free Coconut Pancakes

1 1/2 Cups Gluten Free Pancake Mix 
1 Large Egg (you can use egg alternatives as well)
1 (11 fl oz) Coconut Milk (I used the Lite) 
**Coconut milk, not water. If you don’t have coconut milk try almond milk.**
1 Tbsp Coconut Oil or you can use Vegetable Oil
1/4 Cup Shredded Coconut

Mix all ingredients together, pre-heat your skillet, and tasty goodness is right at your fingertips. Feel free to add fresh fruit. You can experiment with blueberries or even bananas.
